The second wine of the estate, the 2021 Pavillon Rouge is mostly Cabernet Sauvignon yet includes 18% Merlot, 5% Petit Verdot, and 4% Cabernet Franc. With a pH of 3.68 and an IPT of 74, its a serious, age-worthy second wine offering medium-bodied aromas and flavors of cassis, graphite, and smoked tobacco. Its beautifully balanced, with good mid-palate depth, ripe tannins, and outstanding length. Its in the running for the top second wine in the vintage.
