Derived from old vines in Les Minots (that are a source for the Fèvre massale selection), as well as holdings in Roncières and Chatains, the 2020 Chablis 1er Cru Vaillons unwinds in the glass with notes of white flowers, crisp stone fruit and clear honey. Medium to full-bodied, satiny and enveloping, its a beautifully vibrant, racy wine that concludes with a long, penetrating finish. Its the best young Vaillons Ive ever tasted chez Fèvre.

A restrained Vaillons with nice balance but not quite the drive of this producer’s Montmains at the moment. A precocious, richer example of premier cru but with the stuffing to age well, showing sappy fruit, with a lovely hint of lime on the palate. Relatively early drinking but will keep.
